1 stick butter, softened
1 to 2 tsp. Halladay's Seasoning (suggestions below)
Combine ingredients; let sit 30 minutes. Brush cooked corn with herb butter; salt and pepper to taste.
Suggested seasonings:
Cheddar Ale, Garlic Chipotle, Harvest Ranch, Maple Habanero, Barbecue Rub for Chicken & Ribs
4 1-inch-thick strip steaks
2 Tbsp. olive oil
6 Tbsp. choice of herbed butter, recipe follows
Heat a cast iron skillet or griddle over medium-high heat. Coat steaks with half the olive oil and season with salt and pepper. Coat skillet with remaining olive oil. Add steaks and cook, turning once, about 8 minutes for medium rare. While steaks are still hot, top with herbed butter.
Herbed Butter:
1 stick butter, softened
1 to 2 Tbsp. desired Halladay's Seasoning
Combine butter and seasoning. Let sit 30 minutes before use.
1 (8 oz.) bottle clam juice
1 lb. scallops
1 lb. small shrimp
1/2 lb. cooked lobster meat
8 Tbsp. (1 stick) salted butter
1/2 cup all-purpose flour
1 package Halladay's Lobster Bisque Seasoning
4 cups heavy cream
1 tsp. red paprika
1 cup dry sherry
Heat clam juice and add scallops, shrimp and lobster; cook for 2 minutes. Strain seafood and reserve broth. Melt butter in frying pan (do not burn); whisk in flour slowly to make a roux. Add seasoning and reserved broth and bring up to heat. Slowly whisk in heavy cream. Add paprika, and sherry (to taste). When bisque is to texture and taste, add seafood and heat for 2 minutes or until well heated without boiling.
2 1/2 to 3 lbs. chicken wings or drums
2 cloves garlic, minced
1 Tbsp. butter
1/2 cup maple syrup
1/4 cup cider vinegar
1 Tbsp. Halladay's Garlic Chipotle Seasoning
1 tsp. cornstarch, mixed with 1 Tbsp. cold water
Preheat oven to 400˚F. On a large baking pan, arrange chicken in a single layer. Bake until chicken is golden-brown, about 30-40 minutes. Meanwhile, saute garlic in butter until softened. Add remaining ingredients and cook on high heat until thickened, about 2 minutes. Remove chicken from oven and toss with sauce to coat. Return to oven and bake another 5 minutes.
