Dip of the Month: Spinach Artichoke Dip 5 Ways
When I am off to a gathering (pre and hopefully post COVID), spinach artichoke dip is always a great go to potluck choice. It is so creamy and delicious and is always the first dip to disappear. It is great served with hot crusty French bread or pita chips and it comes together in seconds. We have played with the basic recipe to let you have even more fun with this classic.
SPINACH ARTICHOKE & SAUSAGE DIP
This first recipe features the classic warm spinach artichoke recipe with sausage added. Add some warm bread and a salad and call it dinner! YUM
1 (15 oz) can artichoke hearts, drained and chopped
˝ cup mayo
˝ cup sour cream
˝ cup parmesan cheese, grated
1 cup mozzarella cheese, shredded
4 oz sausage, cooked and crumbled
2 Tbsp Halladay’s Spinach & Artichoke Seasoning
Preheat oven to 350°F. Combine ingredients; fold into a 9-inch pie plate. Bake 20-25 minutes, until hot and bubbly.
SPINACH ARTICHOKE CHEESEBALL
Cheeseballs were all the rage in the 50’s and 60’s. This creamy cheeseball can be rolled in nuts and served with your favorite crackers or pita chips. It comes together quickly and is an easy item to bring to parties or for a summer gathering around the fire pit.
1 (8 oz) package cream cheese, softened
1 Tbsp Halladay’s’ Spinach & Artichoke Seasoning
Combine softened cream cheese with Spinach Artichoke seasoning. Form into a ball; chill for 30 minutes. Roll in chopped nuts, if desired.
SPINACH ARTICHOKE GRILLED CHEESE
Grown up grilled cheeses are fun! While we may revert back to the ‘2 slices of cheese on white bread’ memories of childhood, there are so many ways to get creative with a delicious, warm, gooey melted cheesy sandwich. This grilled spinach and artichoke sandwich will have you rethinking grilled cheese melts in the best of ways. Enjoy with a cup of creamy tomato bisque or just on its own.
1 (8 oz) package cream cheese, softened
˝ cup mozzarella, shredded
˝ cup parmesan, grated
1 Tbsp Halladay’s Spinach & Artichoke Seasoning
˝ cup frozen spinach, defrosted and drained dry
1 (8 oz) jar of plain or marinated artichoke hearts, drained and chopped
4 slices of ciabatta or sourdough bread
1 Tbsp butter, softened
Combine cream cheese, mozzarella, parmesan and Spinach Artichoke seasoning. Fold in spinach and artichoke hearts.
Spread one side of each slice of bread with butter. Put butter side down in a preheated fry pan. Top with filling mixture and an additional piece of bread, butter side up. Cook until bottom side is golden brown, then carefully flip over to cook the other side until golden brown and filling is melted.
CHEESY ARTICHOKE BREAD
This Cheesy Artichoke Bread can be made simply with a loaf of Italian Bread, split open. It bakes in the oven to melt the cheese and crisp the bread. It can be served as an appetizer or with a warm bowl of soup for dinner.
2 Tbsp Halladay’s Spinach & Artichoke Seasoning
1 (14 oz) can artichoke hearts, drained and chopped
˝ cup mayo
˝ cup sour cream
˝ cup parmesan cheese, grated
1 cup mozzarella cheese, shredded
French bread loaf, split open lengthwise or sliced as in photo
Preheat oven to 350°F. Combine all ingredients except bread. Arrange bread on a baking sheet, either as a full loaf with cut side up, or arrange slices in a single layer. Spoon filling mixture onto each slice of bread, or all over the inside of the split loaf. Bake 15 minutes, or until hot and bubbly.
WHITE BEAN & ARTICHOKE DIP
While many of our dip recipes have a dairy base, they can easily be made with white beans or other dairy free options. This White Bean and Artichoke Dip is creamy with a little different twist on your favorite hummus like dip. Stacey’s pita chips are my go-to dipper. Fresh carrot and celery sticks can be used for a healthy option.
1 (15 oz) can cannellini beans, drained and rinsed
1 (14 oz) can artichoke hearts, drained and chopped
2 Tbsp Halladay’s Spinach & Artichoke Seasoning
2 Tbsp olive oil
2 Tbsp fresh lemon juice
2 Tbsp feta or parmesan cheese, crumbled (optional)
Combine all ingredients in a blender or food processor and mix until smooth; stir in cheese, if desired.
